Favorite Easy to Make Salad
Goodmorning! Last week I put a call out for easy, 20 min meals, to help us get back on our feet with the busyness that September brings! We have a few ideas posted on our Facebook page and I welcome anymore that you have off the top of you head. Today I want to share my favorite salad that includes all the macro nutrients you need to make it a full, nourishing meal. You can make it you own and I will offer substitutions below:
Dressing:
whisk together~
1/4 c white balsamic vinegar (can use regular balsamic too)
1 T Dijon
2 T fresh herbs (I like basil, oregano, parsley)
1 tsp crushed fresh garlic
slowly add 1/2 c extra virgin olive oil
Salad:
any type of mixed lettuce (arugula, romaine, spinach, mixed greens)
any veggies of your choice that you have on hand:
tomatoes
cucumber
red onion
zucchini
healthy fat:
olives or avocado or chopped walnuts (these also add protein if you are vegetarian)
protein:
any beans of your choice and or a lean protein (I like salmon, chicken or tuna)
Extras that go a long way:
sprinkled bleu cheese or feta or goat (a little goes a long way on flavor and low fat)
strawberries or dried cranberries to add sweetness
There you have it! I had a version of this last night and it was delicious and filling :)

Tuesday- spin and abs 6, BC 8:30
Wednesday- interval ride 5:30, BC 6, spin and barre 8am
Thursday-body ride 6, BC 8:30am
Friday-BC 6, cardio BC 8:30am
Saturday- spin BC 7 and 8:15am
